Chipotle-Maple Turkey Bake with Sweet Potatoes

Instructions

Step 1
Preheat oven to 350°F.
Step 2
Bake the Turkey; in a small bowl whisk together the maple syrup, olive oil, paprika, salt, and chipotle chili powder.
Step 3
Place the Turkey in a baking dish. Pour half the Chipotle Maple sauce over the breasts. And turn them to coat all sides. Add the Mayonnaise and lime juice to the bowl with the remaining Chipotle Maple sauce and whisk into a well-combined. Set aside until ready to serve.
Step 4
Bake the turkey breasts uncovered for 45-50 minutes until the tops have darkened in color and an instant-read thermometer inserted into the thickest portion of each breast, registers 165 degrees Fahrenheit.
Step 5
Meanwhile, bake the sweet potatoes: if your sweet potatoes are larger than 2 inches in diameter cut them into roughly 2-inch thick disks. Rub the sweet potatoes with Olive oil spread them out on a rimmed baking sheet season with salt. Bake for 35-45 minutes until they are easily pierced with a fork.
Step 6
Remove the Turkey from the oven. Let rest for 10 minutes. Chop half the breasts into one-and-a-half-inch pieces. Transfer to an airtight container and refrigerate to use for meal 2. Thinly slice the remaining turkey and divide it among four plates.
Step 7
Serve the turkey with sweet potatoes alongside topped with a creamy chipotle maple sauce.
