Instructions
Step 1
Remove the husk and silk from each ear of corn.
Step 2
Add the corn to the air fryer basket.
Step 3
Spray the corn with cooking oil and season to taste with salt and pepper.
Step 4
Cook at 400°F for 12-15 minutes, flipping halfway through, until the corn is tender.
Step 5
Remove corn from the air fryer basket and set on a plate. Let cool slightly. Top each ear of corn with 1 tablespoon mayonnaise, divide the queso fresco between each corn, season with more salt, pepper, smoked paprika and cayenne pepper to taste. Sprinkle over the cilantro and squeeze fresh lime juice over top.
