Ground Beef and Sweet Potato Skillet with Sauerkraut Salad

Instructions

Prepare the Sweet Potato

Step 1
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add the cubed sweet potato and cook for about 10 minutes, stirring occasionally, until they start to soften.

Cook the Beef

Push the sweet potatoes to one side of the skillet.

Add the remaining tablespoon of olive oil to the empty side of the skillet.

Add the diced onion (if using) and minced garlic, sauté for 2-3 minutes until fragrant.

Add the ground beef, breaking it up with a spoon, and cook until browned, about 5-7 minutes.

Combine ingredients in Skillet

Add the diced bell peppers to the skillet with the sweet potatoes and ground beef.

Season with salt, black pepper, paprika, and cumin.

Stir everything together and cook for another 5-7 minutes, until the bell peppers are tender and the sweet potatoes are fully cooked.

Prepare Sauerkraut Salad

In a bowl, mix the sauerkraut with the rocket lettuce.

In a small bowl, whisk together the apple cider vinegar and honey.

Drizzle the dressing over the sauerkraut and rocket lettuce, tossing to combine.

Serve

Divide the ground beef and sweet potato skillet between two plates.
