Pierogi Casserole

Instructions

Step 1
Preheat oven to 350°F and lightly spray a 9x13 baking dish.
Step 2
Add the oil to a skillet over medium high heat. Add the onions, season with salt and pepper. Cook a couple of minutes, add the garlic and kielbasa. Cook until the kielbasa is browned, a few minutes each side.
Step 3
Meanwhile add the pierogi to the baking dish.
Step 4
Pour over the kielbasa and onions.
Step 5
In the same skillet add the butter. When melted whisk in the flour and cook 1 minute. Pour in the chicken broth while whisking until smooth. Add in the cream of chicken soup, seasonings and 1 cup cheddar cheese. Stir until smooth and pour over the pierogi.
Step 6
Cover and bake 30 minutes. Sprinkle the remaining cheese over and pop back in the oven to melt the cheese.
Step 7
Top with sliced green onions. Serve with sour cream
