Instructions

Step 1
Add flour to a bowl and stir through the salt*. Then, add yeast and water. Mix briefly with a spoon until dough comes together. *this step is important! Don't let your yeast come into direct contact with the salt or it won't work.
Step 2
In the bowl, you can knead dough lightly with hands for 1-2 minutes. Dough will remain quite shaggy. This step is optional but recommended.
Step 3
Move dough into a well oiled bowl. Cover with a tea towel and leave to rise for 30 minutes.
Step 4
The dough will have risen slightly. Now take the edges of the dough, stretch gently and fold back onto itself. About 4 folds in total. Do this one by one until all edges are folded and create a tighter dough ball. Leave the dough to rise in the same bowl for 1 hour.
Step 5
Then, divide into 4 dough balls (approx 200g). Store in oiled containers. Dough can also cold ferment by leaving it in the fridge overnight.
Step 6
Cook in pizza oven. Or if cooking in kitchen oven, preheat at 250degrees and cook for approx 15 mins.
