Step 1
Mix the water, starter, and all of the flours together into a shaggy dough

Leave for 30 minutes.
Step 3
Add the salt and remaining water.
Step 4
Pinch it together, then fold all the sides into the center.
Step 5
Leave it to ferment for six to eight hours.
Step 6
Then tip out of the bowl and fold all the sides to the centre.
Step 7
Fold the dough into a ball.
Step 8
Dust it with some flour the place it upside-down in a banneton.

Leave it to ferment for 2 hours at room temperature or overnight in the fridge.

Place a cast iron pot or bread clouche in the oven preheat at 230 Celsius

Then, score the bread and place it in the pot or clouche. Spray some water over it.

Bake for 30 minutes covered, then another 15 uncovered.

Leave it to cool.
