Instructions

For the dough

Step 1
In a bowl, add the water, sugar, and yeast. Let it bloom for 5-10 minutes. The mixture should get frothy.
Step 2
Add the oil, flour, and salt and mix to combine.

Knead the dough for 5-7 minutes until firm. (Stand mixer with the dough attachment recommended)
Step 4
Place in a lightly oiled bowl and cover with a towel. Let it proof for 2 hours.
Step 5
Punch down the dough 2-3 times, then divide into equal pieces and shape into balls. Let them rest for 20 minutes. (Kitchen scale recommended)
Step 6
Shape for baking, wrap in plastic wrap and place in ziplock bag to freeze, or cover and refrigerate. Keeps for 3 months frozen or 1-2 days in the fridge.

For Baking

Step 7
Place a pizza stone in oven and preheat to 475 degrees. Let the stone preheat for 30 minutes.

Dust your surface with cornmeal and roll out and shape the dough.
Step 9
Take the stone out and place the dough on it. Bake for 3 minutes.
Step 10
Top your pizza with sauce and mozzarella and any toppings of your choice. Bake for about 15 minutes (time may depend on your oven)
Step 11
Let the pizza rest on a cooling rack for 5 minutes before slicing.
