Baked fish with chorizo & prawn quinia

Step 1
Heat the water, with the fish sauce in a saucepan
Step 2
Heat the oven to 180°C
Step 3
Heat the oil and the herby fish sauce in the oven. When to temperature, bake the fish for 20 minutes. Half way through this time, turn the fish.
Step 4
Add the quinoa to the boiling water and can ok for 10mins with the lid on
Step 5
After the initial 10mins cooking, to the quinoa add the pepper, scallions, capers, sweetcorn and chorizo. Mix well in to the quinoa
Step 6
When turning the baked fish, add the tomatoes
Step 7
After the final 10mins, serve the quinoa, then top with the baked fish. Garnish with a fresh coriander leaf
