Step 1
Preheat oven to 200c (fan)

Step 2
Chop the chorizo and the vegetables





Step 3
Tip your potatoes, chorizo, onions, peppers, olive oil, paprika, garlic powder and oregano into a large baking dish, and give it all a good mix and lay into an even layer


Step 4
Pour over your beef stock and then transfer to the oven and bake for 45-50 minutes or until the potatoes are golden and the stock has been absorbed.
Stir halfway through.

Step 5
To serve, taste the potatoes and add a little bit of salt if needed, then scatter over some coriander, drizzle with a little natural yoghurt
