Step 1
1) Set oven to 420F. Place the raw tomatoes in a cast iron skillet. Roast for 30 minutes. Once done, remove. Set aside. 2) Set skillet on low-medium heat. Add olive oil, garlic & shallot. Saute for 3 minutes. 3) Add the seasonings except salt & pepper to the skillet. Bloom for 2 minutes. 4) Increase to medium-high heat. Add tomatoes. Gently mash. Cook for 3 minutes. 5) Add in rice & veggie broth. Add salt & pepper. 6) Reduce heat to low. Cover. Cook for 60 minutes, or until rice is tender. 7) Stir up. Add coked chicken. 8) Add cilantro.
