Instructions
Step 1
Cook wild rice according to directions. Set aside
Step 2
Cut the meat off the chicken into bite size pieces (works best when chicken is still warm)
Step 3
Dice bacon before cooking: sauté bacon in pan
Step 4
Add carrots and onions. Cook until bad on is crisp and carrots and onions are tender
Step 5
Remove from pan and set aside
Step 6
In a large pot, melt butter
Step 7
Combine flour, salt, pepper and poultry seasoning
Step 8
1 tablespoon at a time, add to melted butter until a roux is formed
Step 9
Once roux is formed, add half and half. Whisk together until well combined
Step 10
Add chicken broth. Cook until thickened to your liking.
Step 11
Add chicken, wild rice and bacon/carrots/onion to mixture
Step 12
Simmer over low heat until soup reaches desired thickness
Step 13
Serve - if you are serving the soup the next day, you will need to thin soup with additional liquid (milk or more half and half)
