Lettuce Wraps

Can fill lettuce wraps with just about anything you have in the fridge. Here a modified fajita recipe is used. Use 3 or 4 oz of your favourite protein.

Instructions

Step 1
In a medium bowl, combine avocado oil, lemon juice, cumin, garlic powder, chili flakes, and paprika. Season with salt and pepper. Add the emat or fish, cover, and marinate overnight in the fridge.
Step 2
Heat a large skillet to medium. Using a slotted spoon, add the meat or fish and the bell peppers. Discard the marinade. Stir and sear until the meat or fish is cooked through.
Step 3
Arrange lettuce leaves on a clean, dry surface. Spoon on-quarter or one-sixth of the meat filling onto each leaf. Garnish with green onions, cheese, guacamole, and sour cream.
Step 4
Roll up each leaf to enclose the filling, or leave them open as "lettuce boats"
