Step 1
Cut the avocados in half and remove the pits. Use a spoon to scoop out some of the flesh, leaving a ½ inch inside the skin. Reserve the avocado flesh for another use. Brush each half with fresh lime juice and sprinkle lightly with salt and pepper.
Step 2
In a medium bowl, mix together the chicken, mayonnaise, the remaining lime juice, cilantro, and chipotle powder until well combined. Season with salt and pepper to taste. Gently fold in the diced tomatoes.
Step 3
Divide the chicken salad among the avocado halves and sprinkle with the cheddar cheese, if desired.
