Cauliflower Au Gratin

Instructions

Step 1
Preheat your oven to 350°.

Cut and wash one head of cauliflower. Bring a small amount of water to a boil, and steam your cauliflower for 5-7 minutes. Strain the water out and set to the side.

Take 3 tablespoons of flour and 3 tablespoons of butter. Cook your flour in the butter until you have a WHITE roux. (Approx. 3-5 minutes) Cook this over a LOW heat so you don’t burn it.

Step 4
Slowly stir in 1 cup of heavy cream into the roux.
Step 5
Add 8 ounces of Swiss cheese, sliced or grated, to the roux mixture and allow to melt.

Add salt, pepper, and nutmeg to taste. Be careful with the nutmeg! A little goes a long way.

In a small dish (I use an 8x8) add your steamed cauliflower. Pour the cheese sauce over the cauliflower, you may stir this LIGHTLY if you feel you need to.
Step 8
Place your dish into your preheated oven for 20-30 minutes. DO NOT COVER! You want the cheese to be brown, bubbly goodness.
Step 9
Once your au gratin is finished, allow it to cool slightly, and serve. ENJOY!
