Instructions

Crust

Step 1
Whisk together the flour, salt, and sugar

Add the diced cold butter and work the butter into the flour mixture until the dough comes together

Wrap the dough and refrigerate for 1 hour

Filling

In a large bowl, combine the sliced apricots, sugar, lemon juice, cornstarch, and vanilla extract - toss gently to coat the apricots evenly

Assemble

Preheat your oven to 200°C

On a lightly floured surface, roll out the chilled dough into a 30 cm circle

Transfer the dough to a baking sheet lined with parchment paper

Arrange the apricot filling in the center of the dough, leaving a 5 cm border around the edges

Fold the edges of the dough to slightly overlap the apricots

Brush the edges of the dough with the beaten egg and sprinkle with vanilla sugar

Bake for 35-40 minutes at 200°C

Let the galette cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely
