Ingredients

1 ¼ cupall purpose flour
1 teaspoonbaking powder
¾ teaspoonbaking soda
½ teaspoonsalt
1 teaspooncinnamon
⅔ cupsugar
2eggs
medium
½ cupvegetable oil
1 poundcarrots
large, peeled and grated
½ cuppineapple
crushed, drained
¼ cuppecans
chopped
¾ cupunsweetened shredded coconut
Cream cheese icing
Instructions
Step 1
Preheat oven to 350 degrees (180c). Grease and lightly flour an 8-inch round cake pan.
Step 2
To make the cake, in a large bowl, sift the flour, baking powder, soda, salt and cinnamon together. In a larger bowl, beat the sugar and egg until light. Slowly beat in the oil and add the grated carrots, pineapple, pecans and coconut. Add the dry ingredients to the wet and mix well.
Step 3
Pour the batter into the prepared pan and bake the cake for 45-55 minutes, or until a cake tester inserted into the centre comes out clean. Let the cake cool before frosting.
Step 4
To make the frosting, mix cream cheese, sugar and vanilla together and beat until smooth. Add the coconut cream in slowly until the frosting is soft enough to spread easily, but still stiff enough to hold its shape. The coconut cream gives it a lovely shiny look and tastes delicious.
Step 5
Cut the cooled cake in half to make 2 layers. Spread half of the icing on the bottom layer. Put the second layer on top and spread with the remaining icing. Garnish the top with toasted coconut flakes.
