1/4 c extra virgin olive oil
1 tsp maple syrup
Pinch of freshly ground black pepper

Step 1
Cut down both sides of the center ribs of the kale leaves. Discard the kale ribs. Chop leaves, place in large bowl. Drizzle kale with 1 tsp of olive oil and massage it into leaves for 30 seconds, to tenderize them. In glass measuring cup combine vinegar, maple syrup, mustard, salt and a pinch of black pepper. Add 1/4 c olive oil and whisk until smooth. Pour dressing over kale and toss well. Thinly slice the apple, add to salad with nuts and Gouda or Cheddar. Toss well and serve.
