Lemon Love Cake

The hunt to find my old favourite puddings from school started when my little boy was due to start school - I wanted him to taste some of the puds as I never really made puddings at home! This is my pudding find so far - if you know of any good ones and would be happy for me to try and then add to my site then I thank you in advance!!! All my recipes are nut free due to my own allergies! So if you find my recipes and try them - let me know - I hope you enjoy the step back in time!

Instructions

Step 1
In 1 bowl mix the flour and baking powder together.
Step 2
In a separate bowl cream the margarine and sugar together.
Step 3
Into the creamed mixture add the flour mixture and the beaten egg.
Step 4
Mix well into a dough consistency.
Step 5
Now leave this dough in the fridge for 15-20 minutes to chill.
Step 6
Line a swiss roll tin with greaseproof paper.
Step 7
Once has chilled divide the dough into 2 pieces.
Step 8
Roll out the first piece on some well floured greaseproof paper as this will help transferring it into the tin. Roll out and once into the tin press into the shape of the tin – don’t worry too much about the state of the transfer as long as the dough covers the base of the tin.
Step 9
Now spread the lemon curd evenly over the dough in the tin.
Step 10
Roll out the 2nd piece of dough as before and the once ready for transfer to the tin place over the lemon curd and mould over to cover all curd,
Step 11
Bake for about 25-30 minutes at 180°c until golden brown.
Step 12
Once out of the oven cooling sprinkle with sugar.
Step 13
Enjoy hot with custard or cold – yummy school puddings!!- Just like school pudding!!!
