Instructions

Step 1
Soak your fruit in Tea overnight so that the fruit softens and steeps. Preheat oven to 125 C (257F). Stir flour into soaked fruit, and mix well. Add more tea if the mixture is too dry. It is quite a thick mixture but sometimes the fruit really absorbs the liquid and it is hard to dampen the flour. Spoon mixture into a 22cm (9″) lined cake tin. Bake for 2½ hours or until cooked through. Remove and leave to cool. Wrap in tin foil or place in an airtight container. This Fruit Cake keeps for a month when stored correctly. This freezes beautifully (for up to 3 months) and will keep in an air-tight container for up to 4 weeks in a refrigerator.

Options online 160 c for 2hr turn off and leave in for 30mins 180 c fan muffin tin 20mins 180/160 fan 1 1/2 hr cool in tin 30mins 160 fan/175 c for 1 hr Some use 600ml liquid to 2 cups flour 2 1/2 cups juice to 2 cups flour 2 cups liquid to 2 cups flour Whilst the recipe calls for Black Tea, you can substitute with Iced Coffee, Orange Juice, Apple Juice, Chocolate Milk for example. Many have also said they have substituted with Pineapple Juice or crushed Pineapple. Even Marmalade has been used successfully. It is a matter of playing around with ingredients. use wholemeal S/R flour - replacing 1/2 the flour. note : normally replacing 3/4 cup for 1 cup of white. also try adding 2 teaspn water (liquid) extra per cup of wholemeal. Spoon mixture into patty pans and bake for 25-35 minutes or until a skewer inserted in the middle of the cake comes out clean.

My comments I COOKED 160 FAN FOR 1 - 1/4 HR. FULL LOAF TIME ( made 1 and 3/4 loaf tin from full recipe) Try 1/3 recipe next time.
