Instructions

Preheat the oven to 425°F (220°C)

Add egg whites (or Aquafaba) and vanilla into a bowl. Whisk until frothy. About one minute.

Sift the flour, sugar, and salt through a fine mesh strainer.

Using a spatula, gently incorporate until it turns into a paste.

Add the water one tablespoon at a time until batter is smooth and forms a ribbon texture when the spatula is picked up.

Place one tablespoon of batter onto a SILICONE MAT (use anything else, and it will stick) and spread into a 3 inch (7-cm) circle.

Repeat with another tablespoon of batter making sure to only leave two circles on the mat.

Bake for 8 minutes until edges are golden brown

Working quickly as soon as they come out of the oven, use a spatula to remove the cookies from the pan. Add a fortune in the middle, fold the cookies in half, then place the flat side on the lip of a cup, folding the edges down into the fortune cookie shape.

Place the folded fortune cookies into a mini muffin mold so they can cool.
