Step 1
Potatoes: Peel and cut 3 potatoes into small pieces. Microwave with 2 tablespoons of water for 6-7 minutes (or boil/steam them).

Peanut Filling: Crush peanuts and mix with 2 tablespoons of brown sugar and a pinch of salt.

Mash Potatoes: Once cooked, add 1/2 teaspoon salt, 1 tablespoon sugar, and 1 tablespoon mayonnaise. Mash while hot, then mix in 4 tablespoons potato starch. Knead the dough.
Step 4
Shape Dough: Form the dough into a log and cut into 6 pieces. Press each piece to make a pocket, fill with mozzarella or peanut mixture, and seal. Flatten slightly.
Step 5
Cook: Heat a pan with 1 tablespoon oil (and optional butter). Cook hotteok on medium-low heat for 5-6 minutes per side until golden brown.
