Chicory salad with walnuts and olives

Step 1
Segment the orange removing the pith and place in a bowl. Squeeze any juice in the membrane into a separate salad bowl. Mix in the walnut oil, lemon juice, sea salt and black pepper.
Step 2
Trim the ends of the chicory, taking out the cores and removing and discard any damaged leaves. Peel off the leaves, putting them in the bowl with the dressing. Add the walnuts, olives, orange segments and marjoram. Toss and serve.
