Instructions

Step 1
Weigh your basil and determine how much of the other ingredients based on the below ratio - b = Weigh of basil leaves o = b (oil weight = basil weight) n = 1/3b (nut weight = 1/3 basil weight) c = 1/3b (cheese weight = 1/3 basil weight)
Step 2
Add garlic & lemon to taste. Typically small clove garlic to 45g basil is a good amount. Roughly chop garlic and soak in lemon juice for 10min prior to combining with the pesto to make its taste less sharp. Add salt to taste.
Step 3
Use immediately. Save in refrigerator for 1-2 days covered with a thin layer of oil. Or freeze in vacuum bags or in jars covered with a thin layer of oil.
