Cauliflower Salad with Champagne Mustard Vinaigrette

This Cauliflower Salad is made using raw cauliflower mixed with pistachios, golden raisins, scallions, and a zesty dijon mustard champagne vinaigrette. This makes for a great side dish and has a ton of delicious flavors!

Ingredients

0.5 headcauliflower
0.5 headpurple cauliflower
½ cupsalted pistachios
chopped
⅓ cupgolden raisins
2 bunchesscallions
sliced
sea salt
pepper
Champagne Mustard Vinaigrette
Instructions
Step 1
Infuse olive oil with chopped garlic for about 20 minutes.
Step 2
Cut out the bottom core off the cauliflowers and discard.
Step 3
Slice or chop the cauliflower as thin as you can.
Step 4
In a jar or food processor add your olive oil and garlic, along with the champagne vinaigrette, dijon mustard and red chili flakes. Mix well.
Step 5
To a large bowl, add your chopped cauliflower, along with sliced scallions, chopped pistachios (save a few for garnish), and golden raisins.
Step 6
Pour your vinaigrette over everything and toss to combine. It's best to let it sit in the fridge for at least a few hours.
Step 7
Once you have given time for everything to marinate together, give it a quick toss and serve in a bowl, garnished with some extra chopped nuts. Enjoy!
