Step 1
1. Preheat oven to 400 degrees F (200 C) Brush a 12 inch pie plate or oven proof skillet with olive oil.
2. In a mixing bowl place the eggs, egg substitute, all cheeses except cheddar and all veggies except tomatoes and stir to combine.
3. Pour this mixture into prepared dish and sprinkle with shredded cheese and decorate top with cherry tomatoes as desired.
4. Place dish in oven on middle rack and bake for 15-20 min adding more time as needed according to your oven.
5. The dish is done when eggs are set and a knife comes out clean when tested in the center.
