Instructions
Step 1
Line a 9x9 baking pan with parchment paper
Step 2
Blend ice cream ingredients until smooth. Pour into pan and place in freezer for 2 hours
Step 3
Remove pits from dates, soak in hot water if needed to soften
Step 4
Blend caramel ingredients until smooth, scraping down the sides as needed
Step 5
Pour caramel over the ice cream layer and freeze overnight
Step 6
Cut into 8 bars, return to freezer
Step 7
Melt chocolate and coconut oil in 30-second intervals, stirring between each interval
Step 8
Allow the chocolate to cool slightly
Step 9
Dip each ice cream bar in chocolate using two forks. Coat, tap off excess, and place on parchment paper to harden
Step 10
Return to the freezer until chocolate is fully hardened. Enjoy!
