Instructions

Step 1
Preheat your oven to 425°F
Step 2
In a medium-sized shallow bowl, combine 2 tablespoons of olive oil with lime juice, chopped cilantro, chili flakes, garlic, honey, cumin and smoke liquid. Whisk the mixture together thoroughly.
Step 3
Add the chicken thighs to the marinade and toss to coat them evenly. Cover the bowl with plastic wrap and place it in the refrigerator for 10-15 minutes
Step 4
Heat the remaining two tablespoons of oil in a non-stick pan or a cast-iron skillet over medium-high heat.
Step 5
Add the chicken thighs along with any leftover marinade from the bowl. Proceed to sear the chicken on each side, starting with the skin-side down, for 4 minutes per side or until they turn golden and crispy. The chicken will not be fully cooked at this point
Step 6
Transfer the chicken to the preheated oven and bake until the chicken is fully cooked, which typically takes around 15-20 minutes.
Step 7
Garnish with some fresh cilantro leaves and lime slices or wedges
