Instructions
Step 1
Make marinade with pineapple juice, whisk in drizzle of oil, juice from 1 lime wedge, half of lime zest, half of Southwest Spice, & lg. pinches of salt/pepper. Add steak to bowl with marinade and turn to coat. Marinate (at least 15 min.), turning steak periodically.
Step 2
In sm. bowl, combine sour cream, squeeze of lime juice, & remaining lime zest. Season with salt. Add water, 1 tsp at a time, until mixture reaches a drizzling consistency.
Step 3
Heat drizzle of oil in lg. pan over med.-high. Add pineapple; cook (3-5 min.), stirring occasionally, until beginning to char. Remove from heat; transfer to cutting board & roughly chop. Wipe out pan.
Step 4
Remove steak from marinade; discard marinade. Pat meat dry with paper towel; season all over with salt/pepper. Heat drizzle of oil in pan used for pineapple over med.-high. Add steak & cook (3-5 min per side) to desired doneness. Turn off heat; transfer to cutting board to rest. Wipe out pan, then heat lg. drizzle of oil in it over med.-high. Add onion, poblano, & remaining Southwest Spice. Cook (5-7 min.), stirring, until softened.
Step 5
Meanwhile, wrap tortillas in damp paper towels; microwave (30 sec.) until warm & pliable. Slice steak against grain into very thin strips. Divide among warm tortillas; top with veggies, pineapple, & crema. Serve with remaining lime wedges on side.
