Instructions

Step 1
In a saucepan, combine sugar, water, vanilla, honey cinnamon sticks, and orange. Simmer for 5 mins and allow to chill
Step 2
Meanwhile roughly chop the nuts. In a bowl, combine nuts with cinnamon and semolina until combined.
Step 3
Grease a large casserole dish with butter

Melt butter
Step 5
Lay down approx 5 pastry sheets in the dish, sprinkling melted butter between and on top of each layer. Allow pastry to sit scrunched if too large for pan.
Step 6
Add 1/4 nut mix
Step 7
Repeat with 2-3 more sheets of filo per layer with nut mix until nut mix consumed.
Step 8
Top with final pieces of filo, buttering between and on top.
Step 9
Add extra butter around edges. Sprinkle with cold water.
Step 10
Using a sharp serrated knife, cut into diamonds or triangles. Place a whole clove into each slice (not for eating).
Step 11
Pour cold syrup over evenly.
Step 12
Bake at 170C fan forced for 25mins or until flaky and golden brown.
