Trader Joe's Lasagna

This recipe is suited for an 8x8 baking dish & is also printed on the box of the Trader Joe's No-Boil lasagna noodles. This recipe calls for bolognese sauce, but I prefer to use TJ's Tomato Basil Marinara sauce! It's also flexible since you can choose whatever meat you'd like! I like to make it with hot italian sausage & lean turkey. If you can't find Trader Joe's no-boil lasagna noodles, you can use other store-bought lasagna noodles! You may have to break them down to size but just make sure they say "no-boil' or "oven-ready"!

Instructions
Step 1
Preheat oven to 375 degrees.
Heat a large pan over medium heat & cook meat(s) until cooked through.
Drain grease, return meat to pan.
Step 2
Pour sauce into the pan along with the meat; heat through. Set aside.
Step 3
In a medium bowl, combine mascarpone cheese, 1/2 cup milk, 3/4 cup parmesan & 1/2 tsp of nutmeg (if using). Mix well.
Step 4
Put a little dollop of the cheese mixture into the baking pan, just enough for a thin layer to cover the bottom.
Step 5
Using your hands and a spoon or spatula, coat both sides of 2 lasagna noodles with the cheese mixture and place them flat & side by side into the baking dish,
Spoon some meat sauce on top of the noodles, just enough for a thin layer & spread out so the noodles are mostly covered.
Sprinkle some parmesan over the meat sauce.
Step 6
Repeat step 5 three more times, for a total of 4 layers in the lasagna. (If you've used too much meat sauce between your layers, you may have only enough sauce for 3 layers, but that's okay!)
Step 7
Once you've topped your last layer with the remaining meat sauce, if you have extra cheese mixture, pour the rest of it over the top of the lasagna.
Sprinkle with parmesan.
Step 8
Bake in the oven for 45 minutes, until brown & bubbly.
Let cool for 15-20 minutes & enjoy!
