Instructions

Step 1
Oven 325. Put the fresh bread in a bowl, cover it with water, and let it soak for a minute or so. Pour off the water, wring out the bread, then crumble and tear it into tiny pieces.
Step 2
Combine the bread with all the remaining ingredients except the tomato sauce in a lg mixing bowl in the order they are listed. Add the dried bread crumbs last to adjust for wetness.
Step 3
Shape the mixture into handball-sized meatballs and space them evenly on a baking sheet. Bake 25-30 min.
Step 4
While meatballs are baking, heat tomato sauce in a saute pan large enough to comfortably accommodate the meatballs.
Step 5
Add meatballs to sauce and simmer 30 min. Serve with a healthy portion of tomato sauce and topped with additional grated Romano.
