Instructions

Step 1
Preheat oven to 350 F
Step 2
Prepare three bowls with flour, beaten eggs and bread crumbs. Set aside.
Step 3
Remove filets from Chicken Breasts
Step 4
Butterfly chicken breasts
Step 5
Arrange chicken on a glass or plastic cutting board.
Step 6
Cover chicken with plastic wrap.
Step 7
Pound chicken with meat mallet (flat side) until uniformly thin (1/4 inch)
Step 8
Season both sides with salt and pepper
Step 9
Dredge chicken breasts in flour and shake off excess.
Step 10
Dip dredged chicken in eggs letting the excess drip off
Step 11
Place in bread crumbs coating each side throughly.

Repeat on each chicken piece

Heat 1 tbsp olive oil and 1 tbsp margarine/butter and then add garlic and sautéed for 30 seconds
Step 14
Add half the chicken breasts to the pan and brown each side until dark golden brown, being careful not to char. Repeat cooking steps with the remainder of the oil/margarine and chicken

While chicken is cooking, prepare a cookie sheet lined with foil and pour 3/4 of the marinara on the sheet to cover.
Step 16
Once all chicken is cooked, place on sauced cookie sheet and top with the remainder of the sauce and slices of mozzarella to cover

Place in preheated oven and cook for about 10 mins
Step 18
Set the oven to broil and cook for an additional 5 mins until the cheese is bubbly
Step 19
Serve with your favourite sides. We love pasta and salad.
