Mushroom-Spinach-Swiss Quiche

Instructions

Step 1
Unfold piecrust, and place on a lightly floured surface. Roll out to 1/8-inch thickness. Carefully place in a 9-inch pie plate. Fold edges under, and crimp.
Step 2
Bake on lowest oven rack at 400 F for 8 minutes. Cool.
Step 3
Melt butter in a large skillet over medium-high heat. Add mushrooms and bell pepper; saute 7 to 10 minutes or until tender. Stir in port; cook, stirring often, until liquid is absorbed.
Step 4
Whisk together half-and-half and next 5 ingredients in a large bowl. Stir in mushroom mixture, spinach, and cheese. Pour into prepared crust.
Step 5
Bake on lowest oven rack at 400 F or until set. Let stand 10 minutes.
