No-Bake Pumpkin Pie Energy Bites Ingredients: - 1/2 cup canned pumpkin puree - 1 1/2 cups rolled oats - 1/4 cup almond butter - 1/4 cup honey or maple syrup - 1 teaspoon vanilla extract - 1 tablespoon chia seeds - 1 tablespoon flaxseed meal (optional for extra fiber) - 1/2 teaspoon pumpkin pie spice - 1/4 teaspoon cinnamon - 1/4 cup mini dark chocolate chips (optional) - A pinch of sea salt Directions: 1. In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth. 2. Add the rolled oats, chia seeds, flaxseed meal, pumpkin pie spice, cinnamon, and a pinch of sea salt. Mix well to combine. 3. Fold in the mini dark chocolate chips if using. 4. Roll the mixture into bite-sized balls (about 1 tablespoon each) and place them on a baking sheet lined with parchment paper. 5. Refrigerate for at least 30 minutes to firm up. 6.
