Crockpot Chicken Broccoli Cheddar Soup

This makes a lot of soup, so go ahead and freeze half for later. You can make this easier by using premade cream of chicken soup and then serve with homemade bread.

Instructions
Step 1
In a large saucepan, sauté onion and celery in the butter until onions are translucent. Add seasonings to veggies and cook for 1 minute. *NOTE* if you are using premade cream of chicken soup, skip step 2.
Step 2
Sprinkle flour over veggie and seasoning mixture and whisk together until all liquid has been absorbed by the flour. Mix chicken bouillon with 1 cup hot water. Slowly add mixture to veggies while continuing to whisk. Add milk in slowly while whisking. Continue to whisk together until mixture thickens (this is now your cream of chicken soup).
Step 3
Add chicken, cream of chicken soup, 16 oz broccoli and remaining broth and water to a 7-quart crockpot. Cook on low for 4 hours.
Step 4
After 4 hours, add in remaining broccoli. Allow to cook for 1 hour more. *NOTE* if it's really thick still, feel free to add more water or milk.
Step 5
After 1 hour, shred chicken then add in cheese and mix thoroughly. Serve however you'd like.
