Crockpot Chicken Broccoli Cheddar Soup

This makes a lot of soup, so go ahead and freeze half for later. You can make this easier by using premade cream of chicken soup and then serve with homemade bread.

Instructions
Step 1
Add chicken, broth, half the broccoli, and seasoning into the crockpot. In a medium saucepan, sauté onion and celery in 1 tbsp of butter until onions are translucent and celery is soft. Put into crockpot. (You can skip this step, but I prefer to cook out the raw veggie taste)
Step 2
In a medium pot, melt 2 tbsp of butter. When melted, add 2 tbsp of flour while whisking. Continue to whisk while it cooks for 1-2 minutes.
Step 3
Slowly pour milk into flour and butter mixture, while continuing to whisk.
Step 4
Add shredded cheese into milk mixture in small batches, making sure that each batch is fully melted before adding more.
Step 5
Add cheese mixture into crockpot and stir together. Turn crockpot on low for 4 hours. After 4 hours, add remaining broccoli to the crockpot.
Step 6
Allow soup to cook an additional 1-2 hours, or until chicken is easily shredded.
