Step 1
Preheat oven to 350°
Step 2
In a skillet, on medium heat, sauté the frozen onions and peppers in the olive oil until soft. Add the mushrooms and cook for a further three minutes. Add the minced garlic and Italian spice and then sauté for 30 seconds.
Step 3
In a blender, mix the eggs and cottage cheese until creamy.
Step 4
Once the vegetable combination is done, add the egg mixture to the skillet along with the shredded cheddar and bacon, then add salt to it and stir to combine.
Step 5
Spray an oversized pie plate with cooking spray. Pour quiche mixture into pie plate and bake for 40-45 minutes.
