Keto Cottage-cheese Quiche

Instructions

Step 1
Preheat oven to 350°
Step 2
In a skillet, on medium heat, sauté the frozen onions and peppers in the olive oil until soft. Add the mushrooms and cook for a further three minutes. Add the minced garlic and then sauté for 30 seconds.
Step 3
While the veggies are cooking, in a blender, mix the eggs and cottage cheese until creamy.
Step 4
Once the vegetable combination is done, add the egg mixture to the skillet along with the shredded cheddar, ham, bacon, chiles, Worcestershire sauce, & mustard. Then add salt & pepper to it and stir to combine.
Step 5
Spray an oversized pie plate (possibly 2 pie plates) with cooking spray. Pour the quiche mixture into the pie plate and bake for 40-45 minutes.
