Step 1
To a greased crockpot, add three chicken breast, 1 jar of salsa, and taco seasoning to taste.
Step 2
Cook on low for 6-8 hour or high for 3-4 hours.
Step 3
Once done, remove the chicken with some of the salsa and shred. I use my stand mixer for this step.
Step 4
On a street flour tortilla add a thin layer of shredded Mexican cheese, and on half add your shredded chicken.
Step 5
Fold your quesadilla in half and press. Repeat this step until you have formed all of your quesadillas.
Step 6
Heat in a skillet.
