These potato skins are delicious and tasty and are a hit at any family gathering.

Instructions
Step 1
Wash the potatos and prick with a knife and microwave for 10 minutes.

Pre heat oven

Allow to cool for 10 minutes

Once cool enough to handel, split the potatos in half length ways.

Then scoop the potato flesh out with a spoon and place in a bowl.

Set the empty potato skins aside for later

Mash the potato filling.

Using scissors ✂️ cut the bacon up into chunks ( removing the fat) and fry in a dry frying pan. Add this to the potato mix along with half the grated cheese.

Add salt and pepper to taste and mix well.

Using a spoon scoop the mix up and refill the saved potato skins.

Arrange on a baking sheet.

Top with the remaining grated cheese and bake for 20 minutes in a hot oven.
