Nutrition per serving: - Calories: 350 - Protein: 10g - Carbohydrates: 45g - Fat: 15g - Fiber: 5g Preparation time: 45 minutes Instructions: 1. Preheat the oven to 375°F (190°C). 2. In a large skillet, heat some olive oil over medium heat. Add the onion, garlic, carrot, and celery, and cook until softened, about 5 minutes. 3. Add the lentils, vegetable broth, tomato paste, thyme, rosemary, salt, and pepper to the skillet. Stir to combine and simmer for 10-15 minutes, until the mixture has thickened. 4. Roll out one sheet of puff pastry and cut it into 4 equal squares. Place a spoonful of the lentil mixture in the center of each square. 5. Roll out the second sheet of puff pastry and cut it into 4 equal squares. Place a square on top of each filled square, pressing the edges together to seal. 6. Place the pies on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown. 7. Serve the Aussie Meat(less) Pies hot and enjoy! Note: You can customize this recipe by adding your favorite vegetables or protein alternatives. You can also make mini pies by cutting the puff pastry into smaller squares.
