Step 1
Cut the leeks and potatoes into pieces, add them to a baking tray, season with salt, pepper and olive oil and bake them in the oven for 30/45 minutes or until fork tender. Mix your vegetables in a food processor with some water previously seasoned with salt or with some vegetable stock and pour everything into a pot. Add some heavy cream, seasoned with salt and pepper and cook for 10 minutes. Serve your soup with some croutons, some fresh thyme, some olive oil and some grated cheese on top. Buon appetito!
