Bittersweet Keto Fudge

This fudge is a healthy version of my Traditional Fudge Recipe, where I swapped out the sugar and marshmallows for liquid monk fruit. The result is a fudge with the perfect texture and a strong, bittersweet chocolate flavor. If you like super dark chocolate, than this fudge is for you

Instructions
Step 1
Line an 8" square pan with parchment paper, and set aside. You can also use a 9x5" bread pan for a half batch
Step 2
In a medium saucepot over medium-high heat, combine the evaporated milk, butter, and salt with a heat-proof silicone spatula
Step 3
Bring to a full rolling boil. Stir constantly, scraping the bottom, sides, and corners of the pot to prevent sticking and burning. Let boil for 5 minutes under constant stirring
Step 4
Remove from heat and add your chocolate, vanilla, and monk fruit. Vigorously stir until all the chocolate has melted, and the fudge is fully smooth
Step 5
Transfer the fudge into your lined pan, and level it out by tilting the pan
Step 6
Chill in the fridge for 3 hours to set before slicing
