Poor Man's Ice Cream

This 3 ingredient ice cream (okay 4 if you count salt) is dead simple, sugar free, and tastes exactly like classic vanilla ice cream. Even Vic agreed that it was spot on to regular vanilla ice cream, and this contains a fraction of the sugar, fat, and calories, all while having more protein, calcium, and vitamin B12. Not bad for a treat!

Instructions
Step 1
Place a medium glass, ceramic, or metal bowl (anything but plastic) in the freezer overnight. Refrigerate your can of evaporated milk overnight
Step 2
In your bowl, combine together evaporated milk, vanilla (pure is better, not imitation), liquid monk fruit, and a tiny pinch of salt. Beat with a hand mixer until thick and fluffy

Step 3
Freeze for 1 hour. Churn with your electric mixer, and return to the freezer for another hour. Repeat
Step 4
Transfer the ice cream to an airtight container, and pack down. Freeze for at least 1 more hour before serving. This can be eaten right away, or stored in the freezer indefinitely
