Instructions

Step 1
Drain the garbanzo bean liquid into a large bowl. Use the beans in another recipe, we won’t be using them.
Step 2
With a food processor or sealed in a ziploc bag using a rolling pin, grind your freeze dried fruit into a fine powder. Continue until you have 3 Tablespoons worth.
Step 3
Add the ground fruit to the sugar. Mix well.
Step 4
With a mixer, whisk the aquafaba on medium high until just about soft peaks. Add your cream of tartar.
Step 5
Turn your mixer to high and begin adding in the fruit sugar 1 Tablespoon at a time. Waiting 15 seconds between each addition.
Step 6
Once all the sugar has been added, gently scoop the mix into a piping bag and pipe small dots onto a lined parchment sheet. They don’t expand much and this recipe makes a lot to pack them on there.
Step 7
Preheat oven to 250 degrees.
Step 8
Bake for 1 hr 30 minutes. Let rest for 15 minutes before removing from the tray.
