Step 1
Adjust rack to top position and preheat oven to 450 degrees.

Wash and dry produce

Trim and slice crosswise into 1/2 inch thick rounds. Dice tomato into 1/4 inch pieces. Quarter lemon. Roughly chop dill.
Step 4
Toss Zucchini on a baking sheet with a drizzle of olive oil, salt and pepper. Roast on top rack until tender and lightly browned. 14-16 minutes
Step 5
While Zucchini roasts, in a small pot combine couscous and chicken stock. Bring to a boil, then cover and reduce to a low simmer. Cook until tender. 8-10 minutes
Step 6
While couscous cooks; heat a drizzle of olive oil in a large pan over medium-high heat.
Step 7
Add chicken, Oregano, half the garlic powder, salt and pepper. Cook, stirring occasionally, until chicken browned and cooked through. 4-6 minutes
Step 8
In a small bowl combine tomato, juice from half of lemon, a drizzle of olive oil, salt and pepper.
Step 9
In a separate bowl, whisk together, mayonnaise, sour cream and remaining garlic powder. Add water 1 tsp at a time until mixture reaches drizzling consistency.
Step 10
Serve zucchini, couscous, chicken, tomato salad, garlic sauce, dill, almonds and remaining lemon wedges family style.
