Instructions
Step 1
Cut squash in half and roast until tender
Step 2
remove sausage from casings and brown in the soup pot
Step 3
Remove sausage from pot, leaving the fond and rendered fat behind
Step 4
Saute onion and garlic until soft
Step 5
Add apple, chicken stock, and cooked squash
Step 6
Puree until smooth, then add back to the pot
Step 7
Add cooked sausage and as much heavy cream as desired
