Instructions
Step 1
Preheat smoker to 225 degrees
Step 2
Slather thin film of mustard on ham and coat generously with BBQ rub
Step 3
Smoke until internal temp reaches 150 defrees (approx 8 1/2 hours)
Step 4
In sauce pan add jar of preserves, 2 cups pineapple juice, chipotle, cinnamon stick, brown sugar and salt & pepper and heat until boiling
Step 5
Raise smoker temp to 275
Step 6
Remove ham from smoker and put in disposable aluminum pan and pour half of the glaze mixture on top and add 2 cups pineapple juice, then cover with foil and put back in smoker
Step 7
Cook until internal temp reaches 205 degrees
Step 8
Remove from smoker and let cool for 30 minutes
Step 9
Strain remaining glaze
Step 10
Pull ham and pour remaining glaze over pulled ham
