Instructions

Step 1
Boil potatoes.
Step 2
Beat hot potatoes and room temp butter immediately. If potatoes are not hot, melt the butter before mixing.
Step 3
Next, add sugar, ½ cup per pie. You can add more because sweetness disappears when baking. Completely melt sugar in the batter a half a cup at a time.
Step 4
Add room temp eggs keep beating, and make sure you don't stop.
Step 5
Add cinnamon to change the color of the batter to medium brown.
Step 6
Add ½ can of evaporated milk and the whole bottles of vanilla and lemon extract.
Step 7
Batter should be a little thinner than pancake batter. Add more eggs and carnation if it's not thin.
Step 8
Now pour into deep dish pie crusts. Bake uncovered at 350º for I hour. If the pie is soft in the middle, bake for another 15 mins.
