Ingredients
6 servings
300gfresh blackberries
save 12 for decoration
1 Tbspfreshly squeezed lemon juice
1 ½ Tbspicing sugar
sifted
600gGreek full fat yoghurt
250mldouble cream
whipped
100gmascapone
full fat
½ Tbspicing sugar
sifted for cream
6mint leaves
to decorate
Instructions
Step 1
Step 1: Bring blackberries, lemon juice & sieved icing sugar up to a boil then lower heat until soft. Leave to cool.
Step 2
Step 2: Blitz the blackberries until smooth. Then put half the amount of blackberries into the base of 6 small tumblers or decorative glassware. Mix the other half through the Greek yoghurt with a spoon. Fill equally the glasses leaving room for the cream topping.
Step 3
Step 3: Whip the cream until peaks then fold in the mascarpone & icing sugar.
Step 4
Step 4: Now spoon the cream topping onto each glass, tap glasses on tea towel to level, place 3 blackberries on top with a mint leaf to complete the Blackberry Fool.
