Step 1
Cream together your butter and icing sugar
in your electric mixer.

Next add your egg and vanilla and beat well until smooth.

In a separate bowls sift your flour, baking
powder and salt

Set your mixer at a low speed and slowly add the flour mix cup at a time to your butter mix.

When the dough is ready it will be soft but wont stick to your fingers. Rest it for 10 minutes to firm up. It does not need to be refrigerated.

Roll out 5mm thick on baking paper and use flour for dusting if you feel it's necessary. Cut your shapes and bake at 190c fan forced oven for 8 mins or until lightly golden.
Step 8
Cool and store in an airtight container in the cupboard or in the freezer.
