Instructions
Step 1
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2
In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
Step 3
In a large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined.
Step 4
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 5
Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Step 6
Cover the dough and chill in the refrigerator for at least 30 minutes (the dough will be sticky).
Step 7
Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
Step 8
Roll each dough ball in powdered sugar until generously coated.
Step 9
Place the dough balls on the prepared baking sheet about 2 inches apart.
Step 10
Bake for 10-12 minutes, or until the cookies have spread and the crinkles appear.
Step 11
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
